One of my favourite recipes! The most simple recipe and such a unique flavour. Perfect with endless cups of tea.
Ingredients

160g plain flour
-
100g soft, unsalted butter
-
75g caster sugar
-
2 tsp dried lavender
-
1 tsp vanilla extract
-
1 free range egg yolk
Method

Preheat the oven at 170c and line the baking trays.

Blitz all the ingredients (flour, butter, sugar, lavender and vanilla) together in a food processor or by hand to create breadcrumbs.

Add the egg yolk (no white).

Turn out onto a clean, lightly floured surface and roll out 1cm thick.

Cut out the biscuit pieces and place onto a lined baking tray.

Bake for 7-10 minutes or until lightly golden!

Cool on a cooling rack for 10 minutes and serve.
