The most easy and simple banana tray bake, great for using up your ripe bananas and a perfect breakfast or brunch snack. The coconut adds a unique flavour and subtle texture too!
Ingredients:
- 2 ripe bananas- mashed
- 1 free range egg
- 2 tbsp golden syrup
- 1 tbsp runny honey
- 1 tsp vanilla extract
- 50g desiccated coconut
- 150g rolled oats
- 50g soft dried apricots- chopped
- 125g unsalted butter- melted
- 65g soft brown sugar
- 90g self raising flour
Method:
1. Preheat the oven to 180°C/fan 160°C
2. Grease and line a 20cm square tin with baking paper
3. Mix the dry ingredients in a mixing bowl- oats, flour, sugar, coconut, apricots
4. Gradually stir in the wet ingredients- banana, golden syrup, honey, melted butter, egg and vanilla
5. Pour the mixture into the baking tray and smooth out the top
6. Bake for 20-25 mins until just starting to turn golden brown
7. Leave to cool in the tray for 5 mins and then cut into squares and cool on a rack
