One of my first successful vegan bakes. The oil creates a lovely sticky texture and shiny topping and the blackberries adds some extra sweetness. Super easy so give it a go!

Ingredients

  • 3 large ripe bananas

  • 75g sunflower oil

  • 100g soft brown sugar

  • 220g plain flower

  • 3tsp baking powder

  • 1 tbsp treacle or honey

  • 2-3 tsp cinnamon

  • Handful of blackberries or raspberries

Method

  1. Heat the oven 180C fan

  2. Mash the bananas and stir in the oil, sugar and treacle

  3. Add the flour and baking powder (make sure you sieve them)

  4. Add the cinammon and fruit (chopped)

  5. Bake in a greased, lined 2lb loaf tin for about 20-25 minutes

  6. If it is browning too quickly, cover in foil and bake for another 20 minutes until the knife comes out clean

  7. Cool on a rack and slice to serve!
