Mabes Makes: Sweet Potato & Black Bean Veggie Rolls

A delicious veggie alternative to the classic sausage roll, filled with a wholesome sweet potato, courgette and black bean filling. The black beans give the rolls a hearty substance- and you can add extras like feta if you want to make them a little more unusual.

Ingredients

  • 1 tin of black beans (drained)

  • 3 small sweet potatoes

  • 1/2 a courgette (grated)

  • 1 small red onion (finely chopped)

  • 3 cloves of garlic (crushed)

  • Handful of fresh parsley (finely chopped)

  • 1 tsp ground coriander

  • 1 tsp smoked paprika

  • 1 tsp dried basil or oregano

  • Salt and pepper

  • Cheddar cheese

  • 1 roll of puff pastry

  • 1 egg whisked for the glaze

  • Sesame seeds (optional)

Method

  1. Heat the oven 180C

  2. Prick the sweet potatoes a few times with a sharp knife and heat in the microwave for around 5-8 mins until really soft in the centre, cut open and leave to cool slightly. This will form part of the filling.

  3. In a large frying pan, cook the onion, garlic and dry herbs in a generous glugg of olive oil for 2-3 mins on a medium heat until softened

  4. Scoop the soft sweet potato out of the skin and add to the mixture

  5. Stir in the grated courgette and season with salt and pepper

  6. Add the drained black beans and cook the mixture for a good 10 minutes until its well combined

  7. Stir in the fresh parsley

  8. Once its cooked, leave it to cool on the side for a while whilst you prepare the pastry

  9. Lay the sheet out onto a floured surface and cut down the middle length ways

  10. Add the mixture all the way down the middle and glaze the sides in the whisked egg

  11. Add a generous amount of cheese and season again

  12. Roll up and brush in more egg, slice into pieces. Sprinkle in the sesame seeds.

  13. Place on a baking tray cook in the oven for around 15-20 mins until golden!
