While being keen and enthusiastic in the kitchen, we are a very (very) long way from being required to put in the hours and time required by the professionals. For us, then, this knife is our most beloved. It is substantial enough to help us in our work, while being wieldy and dextrous at the same time. We also feel that, in terms of profile alone, it’s the most beautiful knife we make.It took us a very long time to settle on a knife between our large and small slicers, and this is it.

This superb blade, made from top quality Swedish stainless steel, is complimented with our attractive Scandi wood handle, made from layers of died wood in beautiful complimentary colors.

Savernake Knives takes an uncompromising approach to making knives, with a laser focus on 3 main areas:
- Materials: We are constantly re-examining the materials we use to make the best knives possible, from the steel for our blades to the materials in our handles.
- Geometry: Our signature hollow grind achieves unrivalled light-weight knives with superior all-round performance.
- Comfort: Every part of our knives has been designed from the ground up, and our handles are no different. Countless iterations & experimentation have led us to where we are today.
Your knife should really require very little maintenance, less occasional sharpening and frequent honing. If you have a non-stabilised wooden handle then the odd touch-up with Danish oil – or equivalent – will be all you need. The main thing to remember is not to put your knife through the dishwasher. Not only will it damage the handle, the steam and salt will – even with the best stainless steel – cause corrosion, particularly at the cutting edge. Lastly, if you have a finely-balanced, delicate filleting knife then don’t use it to hack your way through a recalcitrant leg of lamb!

Meet The Designer

Savernake Knives is a progressive English knifemaker and we create exceptional knives for chefs and cooks. Every one of our kitchen knives is individually made-to-order and hand-finished, using a combination of cutting-edge technology and artisanal skills. We want you to have the knife you’ve always dreamed of. Each blade is hollow-ground, a unique profile that takes weight away from the blade and leaves an unparalleled cutting-edge and follow-through feel. We only use very high-end Sandvik 14c28n stainless steel. We work from an old sawmil on the edge of the Savernake Forest near Marlborough in Wiltshire, and strive to combine the best of modern technology with age-old techniques in our quest to make the very best chef knife possible, with no concessions or compromise. We carry out every step of the kitchen knife making process ourselves (short of smelting the steel) and believe that it’s only through keeping things completely in-house that we can maintain quality and speed and also allows us to customise knives at the individual level without compromising quality.
