The smallest of our three signature knives is ideal for those who like the knuckle clearance and feel of a larger knife, but prefer a more controllable blade. It is perfect for intense bursts of cutting, where dexterity and precision are uppermost in the chef’s mind. We seriously recommend this knife for those who like large paring knives and utility knives, but want to take a step towards a more substantial knife. We think it is as small as you can go while still being an all-round Chef’s knife.

This superb blade, made from top quality Swedish stainless steel, is complimented with a beautiful lignum vitae wood handle, sustainably sourced from South America. Lignum Vitae has a striking browny color with a slight green hue to it, with an attractive dark grain running through it. It also finishes very nicely for comfort in the hand.

Your knife should really require very little maintenance, less occasional sharpening and frequent honing. If you have a non-stabilised wooden handle then the odd touch-up with Danish oil – or equivalent – will be all you need. The main thing to remember is not to put your knife through the dishwasher. Not only will it damage the handle, the steam and salt will – even with the best stainless steel – cause corrosion, particularly at the cutting edge. Lastly, if you have a finely-balanced, delicate filleting knife then don’t use it to hack your way through a recalcitrant leg of lamb!

Meet The Designer

Savernake Knives is a progressive English knifemaker and we create exceptional knives for chefs and cooks. Every one of our kitchen knives is individually made-to-order and hand-finished, using a combination of cutting-edge technology and artisanal skills. We want you to have the knife you’ve always dreamed of. Each blade is hollow-ground, a unique profile that takes weight away from the blade and leaves an unparalleled cutting-edge and follow-through feel. We only use very high-end Sandvik 14c28n stainless steel. We work from an old sawmil on the edge of the Savernake Forest near Marlborough in Wiltshire, and strive to combine the best of modern technology with age-old techniques in our quest to make the very best chef knife possible, with no concessions or compromise. We carry out every step of the kitchen knife making process ourselves (short of smelting the steel) and believe that it’s only through keeping things completely in-house that we can maintain quality and speed and also allows us to customise knives at the individual level without compromising quality.
