One of my first successful vegan bakes. The oil creates a lovely sticky texture and shiny topping and the blackberries adds some extra sweetness. Super easy so give it a go!
Ingredients

3 large ripe bananas
-
75g sunflower oil
-
100g soft brown sugar
-
220g plain flower
-
3tsp baking powder
-
1 tbsp treacle or honey
-
2-3 tsp cinnamon
-
Handful of blackberries or raspberries
Method

Heat the oven 180C fan
-
Mash the bananas and stir in the oil, sugar and treacle

Add the flour and baking powder (make sure you sieve them)

Add the cinammon and fruit (chopped)

Bake in a greased, lined 2lb loaf tin for about 20-25 minutes

If it is browning too quickly, cover in foil and bake for another 20 minutes until the knife comes out clean

Cool on a rack and slice to serve!
