Ave Mario's Limonemisu Recipe

Let them whisk you away to a warm late-Spring afternoon in Florence or Siena with their hallowed main dining room filled with Vatican red banquets, antique skylights and a gigantic bar framed by 3,500 bottles… we’re sold.

In honour of Ave Mario’s 2nd birthday we asked them to let us in on one of their super secret recipes and were delighted that they chose to send us their famous Limonemisu to make at home. The ricotta lightens the cream of the classic tiramisu and the marriage of the lemon and lime brings freshness and colour.

Ave Mario's Limonemisu Recipe

Ingredienti per 4 amici:
Serves 4

6 egg yolks
125g sugar
125g ricotta
125g mascarpone
100g cream, whipped until firm
Quantity as desired: ladyfingers/savoiardi biscuits (we use homemade sponge cake, but the best from the supermarket will do)
Zest 2 Lemons, reserve 1 tbsp of juice
Zest of 1 Lime
40ml limoncello
40ml water

How to make Ave Mario's Limonemisu

Recipe: 

  • Put the yolks and the sugar in a bowl, beat the mixture with an electric whisk until it thickens. Grate the zest of the lemons.
  • Pour the mascarpone into a bowl, add the ricotta, whisk vigorously until smooth. Add 1 tablespoon of lemon juice, half of the lemon zest and a dash of limoncello. Mix the two together. Finally, gently fold in the whipped cream with a spatula, mixing from bottom to top. Set to one side.
  • Heat water and limoncello in a saucepan without boiling.
  • To make the limonemisu, take a large baking tray or serving dish. Start with a layer of sponge fingers that have been dipped briefly in the water/limoncello mixture. Spread half the cream on top. Repeat with a second layer of biscuits also soaked, then spread the rest of the cream.
  • Sprinkle with the lime and remaining lemon zest, and refrigerate until ready to serve.

And there you have it. The ultimate refreshing twist on the classic tiramisu, perfect for summer evenings in Tuscany and London alike.
