Courgette caramelises beautifully and maple syrup adds a lovely golden glaze. This is a perfect light veggie lunch with some fresh lime and rice and it also works well as a side dish.
(Serves 2)
Ingredients:
1 tbsp olive oil
2 courgettes (sliced about ½- 1 cm thick)
3 cloves of garlic, crushed
1 red onion, finely chopped
Thumb size piece of fresh ginger, grated
1 tbsp soy sauce
1 tsp maple syrup (feel free to add more if you want to make it sweeter)
1 tsp sesame oil
Sprinkling of sesame seeds
Ground pepper to season
1 fresh lime
Method:

In a large pan on a medium heat, cook the garlic, ginger and onion in the olive oil for 3-4 minutes until softened

Add the sliced courgette and cook for a further 3-4 mins

Add the soy sauce and maple syrup and season with pepper, cook for another 10-15 mins until the courgette begins to caramelise

Towards the end, stir in the sesame oil and sesame seeds

Serve with rice and a squeeze of fresh lime
