A delicious veggie alternative to the classic sausage roll, filled with a wholesome sweet potato, courgette and black bean filling. The black beans give the rolls a hearty substance- and you can add extras like feta if you want to make them a little more unusual.

-
1 tin of black beans (drained)
-
3 small sweet potatoes
-
1/2 a courgette (grated)
-
1 small red onion (finely chopped)
-
3 cloves of garlic (crushed)
-
Handful of fresh parsley (finely chopped)

1 tsp ground coriander

1 tsp dried basil or oregano
-
Salt and pepper

-
Scoop the soft sweet potato out of the skin and add to the mixture
-
Stir in the grated courgette and season with salt and pepper
-
Add the drained black beans and cook the mixture for a good 10 minutes until its well combined
-
Stir in the fresh parsley
-
Once its cooked, leave it to cool on the side for a while whilst you prepare the pastry
-
Lay the sheet out onto a floured surface and cut down the middle length ways
-
Add the mixture all the way down the middle and glaze the sides in the whisked egg
-
Add a generous amount of cheese and season again
-
Roll up and brush in more egg, slice into pieces. Sprinkle in the sesame seeds.
